To be employed, self-employed or employing?

Take cooking for example, there are cooks who are employees, self-employed or employers. A punishment-driven cook can choose to be an employee. A reward-driven cook can choose to be an employer. A self-employed cook happens to be a hybrid. He represents a transition from an employee to an employer.
